International Culinary Culture Festival 2025: Thanh Hoa's 'Homeland gifts' tell the story of a changing province

Amid diverse colours and flavours of hundreds of global cuisines, the small, neatly wrapped nem chua (fermented pork roll)—products of Nem chua Ba Lan brand—were introduced with the pride of a locality long known as the “land of nem chua".
A representative of business shared that among thousands of nem chua producers in Thanh Hoa, Nem chua Ba Lan brand is the only one currently certified as a 4-star OCOP product, meeting quality standards such as ISO 9001:2015 and HACCP. He said: “Thanh Hoa is the land of nem chua. Many places make it, but not all producers meet proper hygiene and packaging standards. Some places simply toss nem into plastic bags, which doesn’t look presentable. We aim to turn nem chua into a true ‘homeland gift’—clean, beautiful, and safe".
To preserve authentic local flavors, the producer regularly conducts product testing to meet strict food safety criteria. But the higher goal, he added, is “to spread this traditional gift of Thanh Hoa to more regions, so people across the country know it and love it".
More than presenting a dish, those who make nem chua bring with them the spirit of Thanh Hoa —simple, diligent, and wholehearted in preserving traditional values.
When asked about expectations for this year’s festival, which welcomes many international friends, booth representative shared that what he hopes for most is not the number of visitors, but the opportunity “for more people to try it at least once”. He said: “If each person tastes it just once, that’s already enough for it to spread. Someone eats it today, and tomorrow they may recommend it to someone else. That’s how a new customer base grows".

For the brand’s representative, International Culinary Festival is not just an occasion to display local specialties but also an opportunity to help promote Vietnam’s image—a culturally rich, friendly, and hospitable nation. Every visitor who stops by, every curious glance, every question about ingredients or preparation becomes a beautiful cultural bridge.
Without placing emphasis on revenue, he jokingly yet sincerely expressed his wish: “I hope by the end of tomorrow, everything is sold out”. When every piece of nem chua has been enjoyed, it means the journey of spreading the flavour has succeeded.
In this vibrant international cultural space, the story of Thanh Hoa nem chua is more than the story of a traditional dish. It is also the picture of a locality in transition—more professional, progressing toward international standards while preserving its authentic homeland taste. A small slice of the broader cultural and culinary exchange, where each local specialty becomes a bridge connecting Vietnam with friends from around the world.
