International Culinary Culture Festival 2025: Discover the cuisine of the Pacific Alliance

WVR - The International Culinary Culture Festival 2025, which will open its doors on November 22 and 23, is an occasion to honour the culinary essence of Vietnam and the world, thereby promoting mutual understanding among nations.

This year's event has an impressive scale, featuring over 120 booths from Embassies, Consulates, Foreign Cultural Centres, local Departments of External Relations, domestic enterprises, and international organizations.

Visitors will have the opportunity to immerse themselves in a space of cultural exchange, exploring diverse cuisine from across the regions of Vietnam and many countries worldwide.

This year, the Pacific Alliance will participate with a pavilion that celebrates the diversity and richness of its member countries: Chile, Colombia, Mexico, and Peru.

In 2025, Colombia held the Pro Tempore Presidency of the Pacific Alliance, reaffirming its leadership and commitment to regional integration and the promotion of Latin American culture on the global stage. Within this framework, Colombia’s participation in the International Food Festival 2025 aims to strengthen bonds of friendship and cooperation with Vietnam and other participating countries, while showcasing the cultural and gastronomic identity of the region.

The Pacific Alliance pavilion will serve as a meeting point for enthusiasts of gastronomy and Latin American culture.

Colombia

At the Colombian stall, visitors will feel as if they are embarking on a memorable culinary discovery journey, rich in the country's culture.

It starts with Buñuelos - a golden, crispy and tasty flour dough delicacy. A must-have during Christmas celebrations.

To balance the palate, diners can enjoy a bowl of Colombian Arroz con leche - a sweet, creamy and milky rice pudding. It is a traditional dessert that evokes the warmth of Colombian homes. Moreover , visitors must not miss a cup of Colombian specialty coffee – a symbol of Colombia's national identity and international pride. This coffee is renowned for its smooth, delicate, easy-to-drink flavor and superior quality, reflecting the pride of this South American country's agricultural sector.

Chile

Meanwhile, Chile brings a characteristic dish for family gatherings: Empanadas de Pino.

This famous pastry captivates diners with its thin, golden-baked crust, creating a delightful crunch. Inside, the signature savory filling is a wonderful blend of richly seasoned beef, fragrant onions, along with the creamy richness of hard-boiled egg and olives.

In addition, guests can enjoy a curated selection of premium Chilean wines made from the Carmenere grape variety, presented by WeWine, alongside other classic varieties such as Cabernet Sauvignon, Chardonnay, Sauvignon Blanc and others, offering visitors an authentic tasting experience that showcases the diversity and characteristics of Chilean wines.

Mexico

Upon arriving at the Mexican stall, visitors can enjoy emblematic flavours such as birria (traditional meat stew), pork carnitas, and chicken chipotle (smoked chili-sauce chicken) - dishes that reflect the depth and diversity of Mexico’s culinary heritage.

These dishes demonstrate the depth and diversity of the native cuisine. Furthermore, the stall will also serve classic Mexican beer and margaritas cocktails.

As the birthplace of tequila and home to the agave landscapes inscribed on UNESCO’s World Heritage List, together with the inscription of traditional Mexican cuisine as Intangible Cultural Heritage of Humanity, Mexico’s gastronomic presence at the festival highlights a culinary tradition recognised for its history and cultural significance.

Peru

And for Peru, visitors will be treated to a diverse menu that clearly reflects the culinary cultural fusion between the high Andean mountain region and the coastal area. Begin with the savory and tender Peruvian tamales, a corn dough with meat filling wrapped in banana leaves.

Next, discover captivating dishes such as pan con chicharrón – a delicious sandwich with crispy pork in a Peruvian sauce, or the popular causa de pollo – a flavorful layered potato dish with seasoned chicken.

To complete the experience , visitors can savor alfajores cookies dipped in condensed milk and coconut. Additionally, the Peruvian stall offers the national drink, the pisco sour.

The Pacific Alliance’s presence at the 2025 International Culinary Culture Festival once again underscores the Alliance's commitment to promoting integration and cultural exchange with Vietnam, especially through gastronomy, as a means of fostering cooperation, tourism, and mutual understanding among nations.

The Pacific Alliance is a regional integration mechanism created in 2011 by these four nations to promote free trade, economic cooperation, and global projection. It also fosters cultural exchange, tourism, and innovation as tools to strengthen ties among member countries and showcase Latin America’s identity internationally.
