Bun Cha or Grilled Pork Meatballs with Vermicelli Noodles

Bun Cha is one of the signature dishes of Ha Noi. The dish combines three elements: a bowl of grilled pork meatballs served in a broth of fish sauce, a plate of rice noodles, and a combination of various fresh greens such as perilla leaves, lettuce, coriander, and morning glory.

Visitors can find Bun Cha in any area of Vietnam, however, the local Ha Noi version is held in high regard. This dish has gone viral since the visit of former US President Barack Obama in 2016 with the late famous chef Anthony Bourdain.

Beef in Vinegar Hot Pot (Bò nhúng dấm)

The dish consists of a vinegar-flavoured broth that may also include coconut milk or coconut water, lemongrass, onions, or other additions, while typical accompaniments include thinly sliced raw beef and an assortment of fresh vegetables and herbs such as bean sprouts, pineapple, lettuce, cucumbers, mint, basil, and perilla leaves.

Besides its main ingredient, which is beef, visitors can try out other types of meats such as squids or prawns. There is always a plate of vermicelli and rice paper sheets to wrap and dip in nuoc mam to enjoy the yum.

Bò nhúng dấm can be served in both restaurants and along the street with plastic tables and chairs, indulging into the sweet and sour taste of the hotpot while admiring the surroundings of Vietnam.

Bò Kho a.k.a Vietnamese Beef Stew

The dish carries the signature of southern Vietnam, which can be consumed on its own or accompanied by a baguette, any kind of rice vermicelli or rice on the side.

A pot of Bò Kho consists of diced beef, carrots, lemongrass, cinnamon, chilli, pepper, garlic, and shallots, all of them simmered in a spicy and aromatic broth. The taste will vary depending on people’s spicy tolerance. It is traditionally consumed for breakfast, garnished with chopped green onions, coriander, and onions.
