A journey sparked by the smallest observations
Nguyen Nam Loc’s culinary journey began in a naturally intriguing way. While studying at Hoa Sen University, he had the opportunity to help organise the prestigious “The Future Chef” competition alongside Ms. Do Thi Kim Quyen and Ms. Vo Thi Thu Ha.
It was here that, beyond his role as a coordinator, he became captivated by how lecturers and experienced chefs breathed life into ingredients, transforming each dish into a vivid story. These seemingly small observations became a powerful source of inspiration, gradually drawing him toward the professional kitchen.

The desire to create such refined values with his own hands led him to pursue cooking seriously. He chose to start from the most fundamental levels, cultivating patience and building a solid foundation - where discipline and meticulousness are always prioritised.
The pursuit of perfection in the smallest details
Instead of following mainstream culinary paths, Nguyen Nam Loc chose to specialise in high-end Canapés - a niche that demands exceptional precision and a highly refined aesthetic sense. This is not only a professional choice but also a clear direction in his culinary identity.
According to him, the greatest challenge lies in “miniaturising” the essence of cuisine into a very small portion. Each piece, only a few centimetres in size, must still achieve a perfect balance of flavour, texture, and presentation.
“Creating a large dish is already difficult, but crafting a small bite that still retains sophistication and reflects the class of an event is an even more exciting challenge,” he shared.
This focus on micro-level details has helped him define his unique style and stand out. Each Canapé is not only delicious but also visually striking and aligned with the overall spirit of the event - an essential factor in earning the trust of high-end clients.
